One of the oldest Ukrainian ritual dishes. It was the second main dish after Kutya at Christmas. Uzvar was boiled of previously prepared dried fruit. They are: wild pears, apples, plums, sometimes they added dried cherries, blueberries, blackberries. When hot uzvar was taken from the oven they sweetened it with some buckwheat honey and let it infuse in a cool place during the night. So, uzvar became not just sweet-scented but also deeply red.
